Make Rabbit Fricassee

Hey, just because your life is turned upside down in a disaster doesn't mean that once you settle back in, you won't want to spice up your wild game catches every now and then, hehe. You'll obviously need to adjust some of the ingredients (save that wine for something more valuable), but knowing basic recipes like this could be good with fresh rabbit, wild mushrooms, etc. :)

That's a good recipe, and easy to follow. Rabbit is very cheap here, so I'll perfect the technique in readiness for the time when I may have to catch the rabbit rather than pick one up at the supermarket. While we're talking rabbit recipes, here's an authentic paella recipe, using rabbit and chicken:

Originally, paella was a scratch dish for the workers in the Valencian rice fields, made with ingredients from the land, which makes it an ideal survival recipe. It's only since the influx of tourists to Spain that the 'posh' paellas with all sorts of fancy seafood have emerged.

You can actually buy rabbit there? Is it only from local markets or is it a commercial thing where you are?

Way back in the 70's my grandfather raised rabbits in the back yard, in the city no less. It can be done with a small space.
